Cinnamon Stick
Vietnamese cassia · Cinnamomum cassia
Volatile oil ≈ 6%Vietnamese cassia, often sold as Saigon cinnamon, is prized for an exceptionally high volatile-oil content of around 6%, roughly double that of Indonesian and Chinese cassia. Elmar sources bark from the forests of Yen Bai, Lao Cai and Quang Nam, where more than 90% of Vietnam's cinnamon is grown.
Bark is harvested in the main April to May crop, sun-dried in summer temperatures of 35 to 42 °C, then cleaned, sorted and rolled in our Hai Duong factory. No synthetic chemicals or pesticides are used in cultivation.
