SICHUAN PEPPER
Sichuan Pepper is also known as Szechuan pepper, Chinese prickly ash, Chinese pepper, Mountain pepper, and mala peppe. Sichuan Pepper is also a typical spice of the Northwest Viet Nam and appears in most dishes made by people here. A mixture of salt and Sichuan pepper, toasted and browned in a wok, and served as a condiment to accompany chicken, duck, and pork dishes. The leaves of the sichuan pepper tree are also used in soups and fried foods.
WAMPEE
Wampee, or Wampi, is a small, aromatic, evergreen tree in the citrus family (Rutaceae). Its shiny, dark green leaves smell like anise when they’re bruised, and the sweetly fragrant, greenish-white flowers develop into oval, edible fruits that ripen in the summer. Sweet and sugary, with a pleasant sourness (note that some varieties are considerably more sour than others). The thin skin has a somewhat resinous, almost spiced flavour.
MAY CHANG
May Chang, which is also known as Litsea Cubeba or Mountain Spice, is a fresh, light essential oil with a distinct lemon-esque note. It is reminiscent of Lemongrass, Eucalyptus Citriodora, and Citronella, but is considered the softest and sweetest of the bunch. May Chang is perfect spice for mixing with beef, fish, seafoods. It is used extensively as a spice by the aboriginal peoples of Taiwan, it is seen as a distinguishing feature of aboriginal cuisine.
